Level 2 Award in Healthier Food & Special Diets 


This one day course is suitable for all staff involved in food preparation and service, especially those involved in the selection of ingredients, recipes and menus.

This one-day course introductory course is designed for anyone whose role includes food preparation and service.  It will provide a basic understanding of nutrition to aid in the preparation of well-balanced meals and menus which will have a positive impact on health, and  an understanding of special dietary requirements.  It is especially suitable for those working in catering operations such as school kitchens, residential and community care environments, and is also recommended for GCSE students taking relevant food and health subjects.

Course content includes:

  • Introduction:  Nutrients and their role in maintaining health
  • The balance of good health:  Sources of nutrients and dietary proportions needed
  • Diet and health:  Excesses and deficiencies
  • Nutritional requirements of different groups: Identifying special dietary needs
  • Catering for different groups: Guidelines and recommendations and menu planning
  • Food processing and fortification:  Effects and addition of nutrients  
  • Food labelling:  An overview of legal requirements and how information is given


This course is generally not run as an open course, only as an in-house course for groups - please contact us if you would like to arrange a course.

CIEH Qualifications

Following the CIEH's decision to voluntarily surrender its status as an Ofqual accredited awarding body, we wish to reassure candidates that we continue to offer accredited training as a recognised Centre for RSPH and HABC as well as CIEH.
